How do you organise a Sportsmans Dinner?

We are planning on organising a fundraising Sportsmans Dinner to raise money for charity. We have access to a venue and have connections to Peter Kay the comedian and Ryan Giggs the footballer. How do we organise the event? (What do we need to do and how can we raise the most money for charity?)
